Enchiladas Suiza

Just as good as they look! Yesterday’s “comida” in the Ajijic Plaza, after picking up my nephew and his partner from the plane in Guadalajara. This (below) is what they had, although it isn’t green and orange:

This is a “molcajete mixto”––marinated beef, chicken, shrimp,green peppers, mushrooms, onions and cheese! They shared it and had enough left over for another meal.

corn torilla, chicken, swiss cheese and tomatillo cream sauce, all heated till cheese is melted. Yummy!!!

I’ve never seen a granite mortar used as a serving bowl! But it sure looked yummy.

It is a molcajete and they are always served in these stone metates with the cheese baked onto the stone so you pull it off, crispy and yummy! I’m going to have one tonight!!!

Oh, Judy, that sounds so delicious. I wish some of our Albuquerque “Mexican” restaurants (and those are different from the “New Mexican” ones) would offer that!
