Reading Nigella’s recipe for lockdown cookies (cookies made with the ingredients you happen to have on hand since the lockdown) I was prompted to give you this recipe for last-minute Microwave Chocolate Cup (literally) Cakes.
I spent a week cooking every day and storing it all away in the freezer at the beginning of my sequestering and now I’m too lazy to do much except write, organize drawers and cupboards and swing in the hammock with Morrie, but when I have a yen for chocolate, I do have this easy recipe for chocolate cake cooked in the microwave in a cup!
1/4 cup flour
1/4 cup white sugar
2 Tablespoons cocoa
1/8 teaspoon soda
1/8 teaspoon salt
3 Tablespoons milk
1 Tablespoon water
2 Tablespoons vegetable oil
1/4 teaspoon vanilla
Mix well in a coffee cup and microwave on high for 1 minute, 45 seconds. (I always cook it longer–2 minutes or more depending on your microwave. I also always wish I had chocolate chips and walnuts to add but never do.) Better with a scoop of vanilla ice cream on top.
Sounds yummy! I’ve been craving chocolate. I’ll have to give this a try.

CHILDHOOD GAMES WAS A GIVE AWAY
Your recipe really makes me drool,
but you must understand I went to school,
and I know better than to bake anything in a cup,
a microwave is too difficult to clean it up.
So I will follow my golden rule,
because I know today is April fool.

It really isn’t, Sam, and this has never splattered.

Yes I felt that it was OK but I could not let April first past without at least doing something mean, it is just in my blood~! OH some of the bad things I have done on this day in the past~!

I don’t think I’ve ever pulled an April Fool’s joke before, but one never knows, does one?

Yes and you do not know me well enough to know that being deaf, I even have a problem boiling water in a microwave, I put something in, and then go back reading posts, not hearing the “ding-a-linger” then the next thing I know is the smell, and an hour of so cleaning up my mess that by then has exploded…. Maybe I would be the first unsuccessful person to make a cup cake. How many times can you heat up your coffee before it is “too much”.

Just set the timer to one minute 45 seconds, Sam, Your microwave will do the rest.

Let me know how they work out for you and how long you cooked them for. I gave this recipe to Yolanda’s young daughter and she loves it!

I will. I particularly like it because it’s egg free! Thank you, Judy

It’s fun for kids because it is so easy and doesn’t involve a regular stove. Yoli was 8 when I gave her the recipe, complete with my only 1/8 tsp measure, and her mom told me she was constantly asking members of the family if they wanted her to bake them a cake. Ha.

When I texted my son today and asked what they were doing, he said they had just made cake in a cup in the microwave, which sounded odd to me, never heard of it and then I see you have written about this very thing! It’s a sign…I must make this for my coffee break tomorrow!
