About lifelessons

My blog, which started out to be about overcoming grief, quickly grew into a blog about celebrating life. I post daily: poems, photographs, essays or stories. I've lived in countries all around the globe but have finally come to rest in Mexico, where I've lived since 2001. My books may be found on Amazon in Kindle and print format, my art in local Ajijic galleries. Hope to see you at my blog.

You know they looked great but they tasted a bit stale. I bought them at a local market and I think they were past their shelf life–except for two my neighbors made that were delicious, so he ate the good with the bad.

lol. I made eggnog cookies, which I make every year. The first batch wasn’t impressive. Bought a different brand of eggnog and they were as they should be…seems our baking is only as good as the ingredients…I’ve realized I have to always check the dates because if it’s near date it’s already too late.

            Oven 300 F 20 = 30 mins. Eggnog Cookies
            Mix: 1 tsp. B. Powder 2 1/4 C. Flour 1/2 tsp. Salt 1 Tsp. Nutmeg 1/2 tsp. Cinny
            Cream: 3/4 C. Butter 1 1/4 C. B. Sugar until fluffy
Wet: Mix 2 Egg yolks or 1 egg, 1 tsp vanilla, 1/2 C. Eggnog
Blend cream and wet ingredient to dry ingredients until combined. Bake and enjoy
Icing: I use eggnog with rum extract and icing sugar until it can be drizzled but stiff enough to stay, over top
